My biggest Beefs with Bioshocks water, were that it didn't stay frozen,it melted in seconds, even in a freezer.
Also, I like areas were the area you are in is flooding but the water doesn't rise, until you walk through a door and it smashes the bulkhead.
Out of all the games mentioned I'd say in Bioshock the water really does play a significant role. With that being said, I don't pay much attention to it in most other games.
It's just a visual element, and I'm not that big of a graphics person. So as long as the gameplay is good I'm not going to go crazy if it doesn't resemble "real" water. And if I remember correctly Halo 3 boasted having realistic water...It was OK IMO.

I agree, but sometimes it's nice to sit back and enjoy some nice looking graphics, Half Life 2 is one for example, but then i always look at the water and think...WTF is that?
ya, fire seems to do the same thing...one day though...we will look back and laugh. Graphics in gaming are moving so fast and so pretty...but the fnny thing is I bet water and fire will cause the companies to get frustrated..."it's not real enough...eff it will do this game in a desert!" pretty soon all games will be done in a desert to avoid the water problems lol. and then mario will be put outta business becasue his plumping job will be useless. ..the end. ^_^
